Sugar, pork, beer, corn, cider, scrapple, and hoppin' John all became staples in the diet of colonial America. The ways Americans cultivated and prepared food and the values they attributed to it played an important role in shaping the identity of the newborn nation. In A Revolution in Eating, James E. McWilliams presents a colorful and spirited tour of culinary attitudes, tastes, and techniques throughout colonial America. Confronted by strange new animals, plants, and landscapes, settlers in the colonies and West (...) Indies found new ways to produce food. Integrating their British and European tastes with the demands and bounty of the rugged American environment, early Americans developed a range of regional cuisines. From the kitchen tables of typical Puritan families to Iroquois longhouses in the backcountry and slave kitchens on southern plantations, McWilliams portrays the grand variety and inventiveness that characterized colonial cuisine. As colonial America grew, so did its palate, as interactions among European settlers, Native Americans, and African slaves created new dishes and attitudes about food. McWilliams considers how Indian corn, once thought by the colonists as "fit for swine," became a fixture in the colonial diet. He also examines the ways in which African slaves influenced West Indian and American southern cuisine. While a mania for all things British was a unifying feature of eighteenth-century cuisine, the colonies discovered a national beverage in domestically brewed beer, which came to symbolize solidarity and loyalty to the patriotic cause in the Revolutionary era. The beer and alcohol industry also instigated unprecedented trade among the colonies and further integrated colonial habits and tastes. Victory in the American Revolution initiated a "culinary declaration of independence," prompting the antimonarchical habits of simplicity, frugality, and frontier ruggedness to define American cuisine. McWilliams demonstrates that this was a shift not so much in new ingredients or cooking methods, as in the way Americans imbued food and cuisine with values that continue to shape American attitudes to this day. When making decisions, governments can and should strive consciously to balance the demands of the present with the needs of future generations. Various advocates for greater governmental foresight have created new processes or institutions within existing systems of democratic government. These include long-range planning departments, futures commissions, impact statements on proposed legislation, environmental protection agencies, and formal technology assessment. But, much more remains to be done. Based on their extensive scholarly and practical experience, the contributors to this volume propose a (...) variety of techniques that will enable foresight to be effectively incorporated into governmental institutions and practices. In his writings on teaching, Isreal Scheffler has argued for the close connection between teaching and reason, an argument which can be summarized by, “Teaching is.. an initiation into open rational discussion.” This essay examines Schefflier's thesis in the light of criticisms drawn from feminist writings on teaching. It is argued that Scheffler's thesis is consistent with a view of teaching in which it can be achieved through “kindness, good example and the efficacy of unconscious imitation,” characteristics of the private, (...) reproductive processes typical of women. It is then argued that Scheffler's concept of teaching is compatible with views of education that try to do justice to both reason and emotion, mind and feeling. (shrink)

Professor Flew has recently sought to demolish the philosophical pretensions of Marx and the Marxists by the use of Hume's Fork and Popper's demand for falsifiable consequences. Marx tried to derive matters of ‘fact and existence’ from ‘relations of ideas’, which Hume's Fork states to be impossible. From this and not from empirical study, he derived predictions for the future course of history which neither he nor his followers have ever properly tested by empirical enquiries. Nor have they ever provided (...) any clear, unambiguous and therefore testable formulations of those predictions. In particular, Flew claims, they have never given any concrete content to the central notion of ‘alienation’ such that an Index of Alienation could be drawn up and enquiries could be made as to whether, for example, the workers are more or less alienated under the private or public ownership of factories. Both faults stem from Marx's continuation of German, specifically Hegelian, philosophy. (shrink)

He has produced a very interesting and valuable book, the most important contribution to the linguistic history of the Homeric text that has been made for a long time. Mr. Agar holds that the language of Homer represents the original ‘Achaean’ speech, and that its abnormalities in vocabulary, (...) word-formation and metre are the result of natural unforced processes of transmission. This position, held by so well equipped and so trenchant an investigator as Mr. Agar, is reassuring. It does not involve any of the mythological factors of the Higher or the Lower Criticism still recommended among us by Mr. Leaf, Father Browne and Mr. Verrall–Pisistratus, Onomacritus, the Ionian conquest of Smyrna, the Thessalian Iliad, the original Achilleis,–and disagrees with Professor Murray's sinister diagnosis clear away the Attic surface and there rises beneath another surface with another set of corruptions, where Ionic rhapsodes have introduced just the same elements of confusion into an Aeolic or at least a pre-Ionic language. The confusion of tongues is deep down in the heart of the Homeric, dialect, and no surgery in the world can cut beneath it’ . The last ten years’ work in Comparative Philology has made it clearer and clearer that the rule-of-thumb for distinguishing the historical non-Dorian dialects does not apply to the heroic and post-heroic age, and that the terms ‘Aeolic’ and ‘Ionic’ in their usual sense should disappear from the history of Homer. The Homeric tongue derives directly from the pre-colonial language of Greece wherein two elements are discernible, the original Ionian and the Achaean or North-Greek which overlaid it. (shrink)
